Long-established patisserie “KATASHIMA” will be holding a POP-UP

KATASHIMA, a long-established patisserie from Kansai run by Katashima, which operates six stores mainly in the Hokuriku area, will hold a pop-up event, “Tokyo POP-UP in Marunouchi 2024,” at Marunouchi Happ. Stand & Gallery in Marunouchi, Tokyo for three days from November 2nd (Sat) to 4th (Mon).

There will be a wide selection of sweets made with Tentaki Yuzu, a specialty of the Tajima region of Hyogo Prefecture.

“Tentaki Yuzu” has a refreshing acidity and natural taste

Last year, KATASHIMA created a sensation in Marunouchi with a pop-up event featuring gluten-free sweets made with “Stork-raised rice,” a brand of rice from the Tajima region of Hyogo Prefecture.

This year, we turned our attention to “Tentaki Yuzu,” a yuzu variety with a refreshing acidity and natural flavor that is grown in a village at the foot of Tentaki, a famous waterfall that represents Hyogo Prefecture and flows beautifully from a drop of 98 meters as if falling from the sky.

The Tajima region in northern Hyogo Prefecture is attracting the attention of chefs from overseas as a treasure trove of excellent ingredients. The meltwater from Mount Hyonose, which stands 1,510 meters above sea level on the border with Tottori Prefecture, flows into the underground water veins of the “Mother Forest,” where natural beech forests and alpine plants grow, and is purified by the power of nature, as pure water springs from the cracks in the rocks. The spring water gathers upstream and creates the beautiful sight of sparkling water falling from the sky as “Tentaki.” “Tentaki Yuzu” is born in a village at the foot of the mountain, surrounded by such beautiful water and clear air.

The concept is to “use the whole, delicious flavor of Tentaki Yuzu,” including not only the juice but also the seeds and peel. Katashima’s product development began with an awareness of the SDGs.

The idea came about when the head of a local vinegar manufacturer, which was squeezing only the juice from the fruit to produce seasonings, approached them for advice. They created “Tentaki Yuzu Marmalade” as a product that makes the most of the strengths of Japanese ingredients, such as the peel, which has a gentle bitterness and had not been fully utilized, and the white pulp and seeds, which are rich in the polyphenol “hesperidin” and “dietary fiber” and are highly nutritious.

“Amataki Yuzu Marmalade” will also be available at this POP-UP. This product has won an award for seven consecutive years at the World’s Original Marmalade Awards, a global marmalade contest held every March in the UK, the birthplace of marmalade.
